Chili Beans with Turkey

Here is a new idea I had using ground turkey instead of ground hamburger. I was very surprise that the chili came out better than I thought it would. This is a quick and easy recipe for anyone who wants something fast and simple. There is enough chili to have for a gathering or family. Hope you enjoy the chili, we did...yummy!

Note:  If you prefer you can use thick Pork Chops instead of Turkey. Cut the Pork Chops in cubes then add the first 5 ingredients and brown chops until done. Then simply follow the rest of the directions for the chili.

(1) 18 oz (3.0 lbs) of (Shady Brook Farms) ground turkey
(3) stalks of celery diced
(1) half of large onion diced
(1) green bell pepper diced
(1) cup of minced garlic
(1) teaspoon of sea salt
(3) cans 1lb 29 oz of pinto beans (Lucky)
(3) cans 15 oz of light red kidney beans (Lucky)
(1) can 14.5 oz (Hunts diced tomatoes) with Basil, Garlic, and onion
(1) can 10 oz (RoTel Mild diced tomatoes) with green chilies
(3) cans 15 oz of (Hunts) tomato sauce
(1 or 2) (Carroll Shelby's Chili Mix Kit)
(25) dried little red peppers
 Sour cream and shredded cheese

Dice bell pepper, onion, and celery, put in a medium bowl set aside. In a large skillet (I use a cast iron skillet) add ground turkey, break it up with a large spoon. Add diced bell pepper, onion, celery, sea salt, and minced garlic and stir. Continue stirring until turkey is cooked through with no red meat showing and it is a little brown in color; I'll add a little water and continue cooking the turkey until water is all gone. While the turkey in browning, open up all the can beans, diced tomatoes, tomato sauce and pour in a large pot (I use a 12qt stock pot for my chili). Stir all the ingredients then add the turkey mixture once it is cooked through. Simmer for about 30 minutes and stir occasionally so it will not stick to bottom of pot. In another pot (medium size sauce pan) add about 4 cups of water and add about 25 dried red peppers, cook it on high until it boils, add to chili and stir. Next you will stir in the Carroll Shelby's chili mix kit, all but the Masa and salt. You can use one or 2 boxes of the Chili mix kit depending how hot you like it. Simmer for another 20 minutes, then mix the Masa with a half cup of water stir until Masa is thick stir in the chili. I don't use the salt that comes with the mixture since I already added sea salt. Now your ready to enjoy your chili. You can add shredded cheese and sour cream as a topping which is really good. You can make this the day before and freeze what is left over, if you do not eat it all within a few days.
